I make these pancakes for my kids all the time. I grew up eating then as a kid. It is one of the traditional Russian breakfast treats, called syrnik. They are tender and juicy and are more nutritious than regular pancakes. Perfect delicious breakfast.
ingredients:
16 oz or ricotta cheese or Russian tvorog (fresh farmer’s cheese)
2 eggs
1/2 cup four
1/2 cup sugar
1 tsp salt
1 tsp vanilla
Mix eggs, sugar, salt and vanilla together in a small bowl. Add the mixture to the cheese and mix everything together using electric mixer or a food processor until the substance is uniform.

Using a spoon scoop some of the batter on the oiled heated pan.

Cook on one side on medium heat for about 5 minutes, until the pancakes are golden, then flip them.

Cook the other side the same way, until the pancakes are ready.
