This is delicious and super healthy sandwich that will fill you up and leave you feeling good. To cook my collard greens, I used a Moroccan Spice Mix, Ras El Hanout. The spice mix gives the greens a Mediterranean sweetness, that brings out the natural earthy flavors of the greens. You can have the greens with a sandwich or as a side dish.
Ingredients:
4 cups of fresh chopped collard greens
1/2 onion chopped
1 tbs olive oil
2 tsp Ras El Hanout Moroccan Spice mix
2 tsp salt (or more to taste)
1 avocado
4 slices of bread
Ras El Hanout Spice Mix
Ingredients:
2 tsp ground ginger
2 tsp ground cardamon
2 tsp ground mace
1 tsp cinnamon
1 tsp ground allspice
1 tsp ground coriander seeds
1 tsp ground nutmeg
1 tsp turmeric
1 tsp ground black pepper
1/2 tsp ground cayenne pepper
1/2 tsp ground anise seeds or 2 drops of anise extract
1/4 tsp ground cloves
Mix all the spices together and keep the mix in an air tight container or a zip lock bag. Clean and chop the collard greens by taking the middle string out and chop the clean greens into strips.
In a large sauce pan saute onion with the Ras El Hanout spice mix on medium heat for 3 minutes. Add in the collard greens and saute everything together on medium heat for another 5 minutes.
Spread a half of avocado on the bottom of one slice of the bread. Place the collard greens on top and cover with another slice.
