Gluten Free Diary Free Coconut Chocolate Muffins

This morning I was craving something sweet.  We ran out of all the sweet things in the house, so I made Coconut Chocolate Muffins first thing in the morning. The muffins came out delicious, they are rich and moist just like muffins should be.  In this recipe I put the full amount of sugar because of my kids, so you can probably reduce the sugar, for the healthier version.

Ingredients:
3 eggs
1 cup sugar
1/2 cup of apple juice
1/3 cup coconut oil
1/2 cup cocoa powder
1 tsp vanilla
1 banana (optional)
1/2 cup+ 1 tbs coconut flour
1 tsp baking powder

Preheat the oven to 350F degree.
Mix all the ingredients together and pour the batter into muffin cups.

Bake them in the oven for 25 minutes.
