I tried a coconut brownie at my friends house and I really like them. So, I decided to make my own version of coconut banana brownies. At first, I made sugar free chocolate banana bars. However, my kids said they too dry and weren’t sweet enough, so I decided, to soak the bars in a sugar syrup. The bars were tasty but they were still missing something, so I decided to add a lemon cream cheese frosting. The final result was to delicious. Everyone in our family loved the Gluten Free Coconut Chocolate Banana Cake with Cream Cheese Frosting.
Gluten Free Sugar Free Chocolate Banana Brownies
Ingredients:
3 eggs
2 bananas
1/3 cup apple sauce
1/4 coconut oil
1/4 apple juice
1 cup coconut flour
1/2 cup coco powder
1/2 cup semi-sweet chocolate chip (optional)
For Syrup
1 cup water
1 cup sugar
For Cream Cheese Frosting
2 oz butter
2 oz cream cheese
1 cups of sugar
1 tsp lemon juice
Preheat the oven to 350F degrees.
Mix all the ingredients together. Pour the batter into 9×13 baking pan and bake for 30 minutes.
While the cake is baking make the syrup and the cream cheese frosting . In a small pan heat up water and sugar until, sugar completely dissolves.
For cream cheese frosting. Beat butter, cream cheese, lemon juice and sugar with an electric mixture until the mixture become uniform and creamy.
Once the cake is ready, take it out of the oven and pour the sugar syrup all over it. Let the cake soak in the syrup and cool down for 10 minutes. Cut the cake on squares and take them out of the syrup pan.

This sounds yummy. I wonder if honey or coconut sugar would work for the cream cheese frosting? I love to treat myself to a gluten free dessert occasionally… so this is helpful. I just need the energy and time to bake. 😊
