This is delicious! It is easy to make and it will leave you crave for more.
Cook time 30 minutes
Ingredients:
1 lb cooked shrimp
2 shallots or 1/2 medium onion, chopped
4 gloves of garlic, chopped
2 cups of spinach
1 cup of cauliflower, cooked
2 tbs olive oil
2 tsp salt
1/2 tsp ground ginger

Set two pots with water to boil, for pasta and cauliflower.
For cauliflower, salt the water and place the precut cauliflower into the boiling water for about 5 minutes. Once the cauliflower pieces are tender pull them out and let them rest.
Cook the pasta according the package instructions.
In a large oiled sauce pan saute chopped shallots and garlic gloves until the onions are golden color. Add shrimps to the pan. Add salt and ginger and mix it all together.
Then add the cooked cauliflower.
Then add the spinach and cook everything for about 5 minutes.

This looks so light and delicious! Perhaps I can substitute with a gluten free pasta or even spiralized zucchini noodles! 🙂
