Spinach Egg Salad with Pomegranate

This colorful delicious and filling salad will speed up you metabolism and leave your taste buds craving for more.  The richness of an egg and avocado and the crispness and freshness of an apple, carrots and pomegranate creates a perfect balance in textures and flavors.

Ingredients:
2 cups of spinach
2 eggs
1 small apple
1 medium carrot
1/2 avocado
1/2 cup of pomegranate
1 tbs chai seeds
1 tsp salt
1 tsp mustard
1 tsp lemon juice
2 tbs of olive oil

Cut an apple, peeled carrot, avocado and eggs.  In a small bowl, mix together chai seeds, mustard, lemon juice, salt and olive oil to make a dressing.  In a large bowl, place all the ingredients together including the pomegranate and pour the dressing on top.  Mix the salad and serve.
