My family eat soups all the time. This is one of our family’s favorites. Easy to make, quick and very nutritious. I use all fresh vegetables, but if you are low on time or fresh vegetable are not available you can use packages of frozen vegetables medley (just make sure the medley doesn’t have corn).

Ingredients:
1/4 lb ground beef
1 onion
3 potatoes
1 turnip
2 carrots
1/2 lb broccoli
1clove garlic
1/2 cup rice
1 tbs salt
1 tsp pepper
Fill up your medium pot 3/4 with water and let it boil. When the water starts to boil place your meatballs in.
Let the meatballs boil. Meanwhile cut onions and sauté then on medium heat on an oiled pan till golden.
Place the onions into the pot with meatballs.
(If you are using frozen vegetables, place about one pound of frozen cut vegetables in the pot with meatballs and sauted onions and let the soup boil, take off the foam, then put your seasoning, rice and garlic and let it cook for 40 minutes).
Cut the turnip,
carrots,
potatoes and broccoli.
Place everything in the pot and bring it to boil. Reduce the heat to medium low. You will see the foam forming.
You have to take the foam off using a large spoon or you won’t have a clear broth.
Once all the foam is off you can put in rice, minced garlic, salt and pepper.
Cover the pot, reduce the heat to low and let it cook for 30 minutes. Taste the broth for seasoning, if needed add more salt or pepper.
