Healthy Zucchini Maple Bread

This nutritious and delicious Zucchini Maple Bread will be a great addition to your table.  My family loves it, I hope yours will love it too.

Ingredients:
4 eggs
1 cup Olive oil
1 1/2 cup Maple Syrup
3 cups of flour (2 cup whole wheat flour+1 cup white flour)
1 cup unsweetened shredded coconut
1/4 cup milled flax sead
2 tsp vanilla
1 tsp cinnamon
1/2 tsp ground nutmeg
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 cups shredded zucchini

Preheat the oven to 350F degrees.
Mix eggs, maple syrup, olive oil and vanilla together.

Separately, mix the flour, coconut, flax seeds, cinnamon, nutmeg, baking powder, baking soda and salt.

Pour the dry ingredients into the wet ingredients.

Mix it all together.  Add the shredded zucchini in.

Using a large spoon, mix the zucchini into the batter.  Pour the ready zucchini batter in the two 8×4 greased and floured baking pans.  Put the pans in the 350F oven for 45-50 minutes.

Check the bread with a toothpick or a baker stick for readiness (if the stick is dry after you penetrated the bread all the way from top to bottom, the bread is ready).
