Chicken Vegetable Casserole

This delicious, vibrant, healthy and easy to prepare dish will brighten up your day.  Cut the vegetable and the chicken, put it all in casserole dish and in the oven and one hour later your dinner is ready.

Cooking time 1 hour 10 minutes
Inactive time 1 hour

1 whole chicken (except the breasts)
4 sticks celery
3 carrots
1/2 onions
1/2 cup white wine
1/2 cup of chicken stock
2 tsp salt
1 tsp pepper

Take a chicken apart (see my post on how to take a chicken apart) or use a store bought pre-cut chicken.  Use wings, legs and thighs.  You can use 4 chicken breast, just remember that the breast cooks faster.

Cut the vegetables and place them with the cut chicken on an oiled casserole dish.

Put salt and pepper in and mix everything together.  Add the stock and the wine in and mix it all again.

Cover with foil and put it in the preheat 375F degree oven for about an hour.  When it is ready remove the foil.


Serve it with rice, couscous or quinoa.
