Thanksgiving Leftovers Egg Muffins

This morning my girls wanted to make something, but we have a refrigerator full of Thanksgiving leftovers.  Then I decided to make a Thanksgiving Egg Muffins. The muffins turns out juicy, tender and delicious.

Prep time:10 minutes
Cook time: 25 minutes
Serves: 12 large muffins

Ingredients:
1/2 shopped onion
1 cup cooked turkey
1 cup cooked stuffing
1 cup feta cheese
1 cup fresh shredded pumpkin
6 eggs
1 cup milk
1 tsp salt
1/2 tsp pepper

Preheat the over to 350F degree.
Mix eggs, milk, salt, and pepper in a large bowl.
Chop the onion and place it in a large oiled muffin pan.

Add a layer of the shopped turkey.

Add a layer of the shredded pumpkin.

Add a layer of the stuffing and the precut feta cheese.

Pour the egg mixture on top each muffin pocket.

Put the muffin pan in the preheated 350 F degree oven for 25-30 minutes.  When the muffins are ready, get them out of the oven and let them rest for 5 minutes.  Using a spatula, gently get the muffins out of the pan and…
