Healthy Apple Cinnamon Oatmeal Muffins

This morning my girls wanted to make muffins.  I was getting ready for my race, so I didn’t have much time cook with them, but then I remembered that I had my Flamikgirls muffin mix, that I prepared to give to people as a gift for Christmas.  The mix has whole wheat flour, oats, flax seeds for the nutrition and cinnamon with ginger for the taste, which makes iit a great breakfast treat.

This was a perfect opportunity to see how it works.  I gave the girls all the wet ingredients and the mix and let them cook.

The muffins turned out delicious!

Wet ingredients:
2 eggs
1/3 cup olive oil
1/3 cup apple juice
1/2 cup apple sauce
1 tsp vanilla
1/2 cup chocolate chips (optional)

Mix all the wet ingredients together.  Stir in the muffin mix. My girls wanted to add the chocolate chips, so we add the chips at the end.

The muffins turned out nutritious and delicious.
