Pipparkook – Estonian Gingerbread Cookies

I was born in Estonia, so every Christmas we had Pipparkook, Estonian version of gingerbread cookies.  In Pipparcook the dough and the frosting is slightly different as well as the method of preparation.  When you are in Estonia,  you can buy fresh, premade cookie dough everywhere.  So growing up, I would buy the dough and make the cookies at home every holiday season.  Today, I still want to have my childhood taste, so I make the cookies every year around Christmas.

Ingredients:
1/2 cup honey
3/4 cup brown sugar
2 tsp cinnamon
1 tsp ginger
2 tsp cardamon
2 tsp cloves
1/2 tsp salt
1 cup butter
2 eggs
3 cups flour
3 tsp baking soda

Directions:
In a sauce pan, put honey, sugar, all the spices, butter.

Heat the mixture up on the medium heat.  Once the butter is melted stir the mixture one more time, turn it off and let it cool…
