We usually have a very busy schedule. I start our day by dropping off my oldest daughter to pre-K at 8am, then I come home, do some school work with my three year old (learning ABC, doing puzzles, learning beginning math). Then I do laundry, cook lunch or dinner while my daughter plays. At 11:30am we pick up the oldest one the from pre-K, rush home, eat lunch. At 12:30pm, we leave for pre-school for both of the girls. I pick them up at 3:45pm, then take the girls to swim or dance at 4:30pm. By the time we come home, it is 6pm. We eat dinner and go to bed.
Sometimes, in addition to this craziness, I have to go to a grocery store or do some other errands. On those days, I have to come up with a healthy lunch or dinner on the go. My life would have been so much easier only if my kids ate sandwiches, any kinds, but they don’t. As a result, I always try to come up with something nutritious and delicious that they can eat on the go. One of their favorite is Beans and Cheese Quesadilla. It is super quick and easy to make, plus it is healthy, nutritious and kids love it.
Beans and Cheese Quesadilla
Cooking time 10 minutes
Ingredients:
2 tortilla
2 tbs shredded cheese
1/4 cup refried beans
1 tbs Olive oil
Place a tortilla on an oiled pan.
On medium heat, wait until the cheese start to melt, then place and spread the beans on top of the cheese.
Cover with the other tortilla and cook for about 2 minutes.
Flip the Quesadilla and cook on the other side until golden.
Take off the skillet, place it on the plate and cut it like a pizza.
Serve it with some carrots, apples or broccoli and Enjoy!

Place the Quesadilla in a container or a zip bag grab some fruits or veggies and your lunch on the go is ready.
