Red Velvet Beet Cake with Sour Cream Orange Frosting

We were going to a Mardi Gras Party and I was asked to bring a Red Velvet Cake for a big crowd.  I made this huge four-layer  Red Velvet Beet Cake.  The end result looked good and was very tasty.  It took some effort to make this cake, but trust me, it was worth the effort.

Ingredients:
4 large cooked beets
1/4 cup olive oil
3/4 cup buttermilk
1 stick butter, melted
1 tsp vanilla extract
4 large eggs
2 1/2 cups flour
1 1/2 cups sugar
3/4 cup unsweetened cocoa powder
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp  salt
FROSTING:
8oz cream cheese
1 1/4 cups powder sugar
1/4 cup sour cream
Zest of 1 orange
1/4 cup toasted coconut

In a food processor crush together beets and olive oil.

Add in eggs, butter, butter milk, vanilla.

In a separate bowl mix together flour, sugar, cocoa powder, baking powder, baking soda and salt.

Add the dry ingredients to the wet ingredients and mix it all together. Pour the batter onto the greased and floured pan.  (I doubled the ingredients to make a larger cake)
Cook in the preheat 350F degree oven for about 30 minutes.

Mean while prepare the Frosting.  Mix all the frosting ingredients together and beat them with an electric mixer until the frosting is all smooth.

Once the cake is out of the oven let them rest for about 10-15 minutes.

Get the cakes out of the oven and cut them in a half longways. Spread the frosting on the half and cover it with another half, spread the frosting on top and put the other layer on.

Keep on going until all layers are covered.

Decorate the top layer.
